Brioche Bread Pudding With Vanilla Custard

Instructions

  1. Preheat oven to 350 F; grease an 11 x 7-inch pan.

  2. Melt butter into hot milk.

  3. Whisk 1/4 cup of the milk-butter mixture into eggs until blended.

  4. Return the egg mixture to the hot milk; whisk in sugar, vanilla, brandy, citrus zest, and spices until smooth.

  5. Toss this custard with bread and raisins.

  6. Spread the bread-custard mixture into the prepared pan.

  7. Bake 40 minutes, until browned and a knife inserted near the edge comes out clean.

  8. Serve warm with desired toppings.
