Breakfast Lasagna With Hash Browns
A breakfast lasagna combines layers of hash browns, eggs, bacon, cheddar cheese, and various vegetables for a complete morning meal.

Preheat the oven to 350 F (180 C).

Spread thawed hash browns in an 11x14-inch pan, season with salt and pepper, then top with half of the shredded cheese.

Brown Canadian bacon in 2 tablespoons of butter in a large skillet; set aside.

In the same skillet, sauté onion, peppers, and mushrooms with 1 tablespoon of butter until tender.

Layer the sautéed vegetables, optional sliced tomatoes, cooked bacon, and remaining cheese over the hash brown base.

Whisk eggs with salt, pepper, and milk; pour over the casserole, pressing gently to ensure layers are soaked, then let stand for 15 minutes.

Bake for 35 to 45 minutes until set, then cool slightly before slicing.
