Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Spread thawed hash browns in an 11x14-inch pan, season with salt and pepper, then top with half of the shredded cheese.

  3. Brown Canadian bacon in 2 tablespoons of butter in a large skillet; set aside.

  4. In the same skillet, sauté onion, peppers, and mushrooms with 1 tablespoon of butter until tender.

  5. Layer the sautéed vegetables, optional sliced tomatoes, cooked bacon, and remaining cheese over the hash brown base.

  6. Whisk eggs with salt, pepper, and milk; pour over the casserole, pressing gently to ensure layers are soaked, then let stand for 15 minutes.

  7. Bake for 35 to 45 minutes until set, then cool slightly before slicing.
