Brazilian Fish Stew (Moqueca de Peixe)

Instructions

  1. Cut fish into bite-size pieces; marinate for 1-4 hours in a zip-top bag with lime juice, salt, pepper, and garlic.

  2. Heat 2 tablespoons olive oil in a large sauté pan, then layer half of the peppers, tomatoes, and onions on the bottom.

  3. Place the marinated fish and its liquid over the vegetables.

  4. Layer remaining peppers, onions, and tomatoes on top, then sprinkle with green onions and half of the cilantro.

  5. Whisk paprika and chile pepper into coconut milk, then pour over the contents of the pan.

  6. Drizzle palm oil over the vegetables.

  7. Bring the stew to a boil, then cover and simmer for 15 minutes; remove cover and continue simmering for 25 minutes until vegetables are tender, seasoning with salt and pepper.

  8. Garnish with remaining cilantro and serve with rice, toasted manioc meal, and fried plantains.
