Brazilian Farofa: Toasted Cassava Flour

A traditional Brazilian condiment, Farofa, is prepared from toasted manioc flour.

Instructions

  1. Melt butter and palm oil in a skillet over medium-low heat.

  2. Sauté onions until very soft and golden, about 10 minutes.

  3. Stir in manioc flour and cook for 3 to 4 minutes until toasted and lightly browned.

  4. Season with salt and pepper.

  5. Optionally stir in black olives or hard-boiled eggs.

  6. Serve.
