Brazilian Coxinha Recipe: Crispy Chicken Croquettes to Delight Any Appetite

Simmer chicken breasts in broth with carrot, a halved onion, and bay leaves for 15-20 minutes until cooked through.

Cool chicken; strain and reserve broth.

Shred chicken finely, then mix with softened cream cheese and lime juice.

Sauté chopped onion and garlic in butter until soft, then stir into the chicken mixture. Season with salt and pepper.

Measure the reserved chicken broth (adjusting to 3 cups if less). Boil the broth, then gradually stir in an equal amount of flour, stirring vigorously for 2-3 minutes until a stiff dough forms. Chill dough for 1 hour.

Optionally, chill both chicken mixture and dough for several hours or overnight.

Using floured hands, shape dough into golf-ball-sized portions, hollow the center, and fill with about 1 1/2 tablespoons of chicken mixture. Seal the dough around the filling, then shape into a drumstick. Place on a baking sheet.

Whisk eggs, and season breadcrumbs in a shallow pan. Dip each coxinha in egg, then breadcrumbs to coat, and chill for 1 hour.

Heat oil to 360 F in a heavy pot. Fry coxinhas in batches until deep golden brown. Serve warm.
