Brandied Peaches

Brandied peaches, requiring three months of aging, make a wonderful edible gift.

Instructions

  1. Start boiling water.

  2. Sterilize two 1-quart jars and lids by boiling for 2 minutes, then air dry.

  3. Cut an X into each peach base, then place peaches in a heatproof bowl and cover with boiling water for 2 to 3 minutes.

  4. Peel a peach to test; if the skin comes off easily, drain and peel remaining peaches, otherwise, let them sit in boiling water for another minute.

  5. Halve, pit, and slice each peeled peach into 8 pieces.

  6. Layer peaches and caster sugar in the sterilized jars, adding half a split vanilla bean to each jar.

  7. Fill jars with brandy until peaches are completely covered, then seal tightly and gently shake to dissolve sugar.

  8. Store jars in a cool, dark place for 3 months, shaking gently once a week.

  9. Serve brandied peaches after 3 months.
