Braised Butterflied Pork Chops

Instructions

  1. In a large skillet, heat 1 tbsp butter and olive oil over medium heat.

  2. Brown the pork chops on both sides, then remove them to a plate.

  3. Add 1 tbsp butter to the pan, then sauté the onion for 3 minutes until translucent.

  4. Stir in flour and mustard for 1 minute. Gradually add heated beef broth, chopped pickle, and lemon juice while stirring constantly.

  5. Simmer the sauce for 5 minutes, stirring frequently, then season with salt and pepper to taste.

  6. Return the pork chops to the skillet, spoon sauce over them, cover, and simmer on low heat for 15-20 minutes until tender.
