Braised Belgian Endives

Instructions

  1. Preheat oven to 375°F if using the oven method.

  2. Heat a large pan over medium-low heat, add butter, and trim endives while it melts.

  3. Arrange endives in a single layer in the pan. Sprinkle with lemon juice, salt, and optionally sugar. Add water along the pan's side.

  4. Cover the pan tightly, using foil or parchment if needed for a secure seal.

  5. Braise endives over low heat on the stovetop for about 30 minutes, or in the preheated 375°F oven for 30 to 40 minutes, until tender.

  6. Uncover and cook over medium heat until any liquid evaporates and the endives are browned.
