Instructions

  1. Grind peppercorns and mustard seed to a medium consistency, then combine with remaining rub ingredients in a small bowl.

  2. Season the pork shoulder thoroughly with the rub, wrap it, and refrigerate for 12 to 15 hours.

  3. Remove the roast from the refrigerator, allow it to reach room temperature for 30 to 45 minutes, and season with kosher salt before grilling; concurrently, whisk mop ingredients in a bowl and set aside.

  4. Preheat the grill for rotisserie use, secure the roast on the rod, and cook over direct low heat for 3.5 to 4 hours, targeting an internal temperature of at least 145 F/63 C.

  5. After the initial hour of cooking, apply the mop every 20 minutes for the remaining cook time.

  6. Remove the roast from the rotisserie, cover with foil, and let it rest for 10 minutes before slicing.
