Instructions

  1. Preheat the oven to 325 F.

  2. Heat bourbon in a small saucepan for 2 minutes, then set aside to cool.

  3. Prepare a 9x5-inch loaf pan by buttering and flouring it, or lining with parchment paper.

  4. Whisk flour, baking powder, and salt in a medium bowl.

  5. In a large bowl, mix melted butter and sugar until blended.

  6. Beat in eggs one at a time, then add mashed bananas, cooled bourbon, and vanilla extract.

  7. Gradually add the flour mixture in thirds to the wet ingredients, stirring gently after each addition until just combined; do not overmix.

  8. Pour the batter into the prepared loaf pan and bake for approximately 1 hour on a middle rack.

  9. Check for doneness with a toothpick; it should come out mostly clean.

  10. Cool the loaf pan on a rack.

  11. Whisk bourbon and confectioners' sugar for the glaze.

  12. Drizzle the glaze over the cooled, removed bread.
