Instructions

  1. In a large nonreactive pan, combine water and sugar, stirring until dissolved; boil the syrup until reduced by one-third, then cool.

  2. Pack halved, pitted apricots into canning jars with the cut side down, distributing vanilla pod portions among the jars.

  3. Fill each jar with the cooled syrup, leaving about an inch headspace, then cover with lids and screw on.

  4. Place the sealed jars in a large pan of cold water. Bring to a boil and process for 25 minutes, then let cool.

  5. On the following day, repeat the boiling process for 15 minutes.
