Instructions

  1. Start boiling well-salted water for pasta.

  2. While water boils, heat oil in a large skillet over medium-low heat.

  3. Sauté garlic and red pepper flakes for 5-6 minutes until fragrant and golden.

  4. Remove skillet from heat, stir in bottarga, and set aside.

  5. Cook pasta to al dente according to package directions.

  6. Drain pasta, reserving one cup of its cooking water.

  7. Combine cooked pasta with the bottarga mixture in the skillet, tossing to coat.

  8. Return the skillet to medium heat, then gradually add reserved pasta water if the pasta appears dry.

  9. Toss with half the parsley, lemon zest, and lemon juice.

  10. Transfer to serving plates, garnish with remaining parsley, and serve immediately.
