Borek: Layered Cheese Pie

A classic Turkish layered pie, Borek combines yufka sheets and feta cheese in an easy-to-prepare casserole.

Instructions

  1. Preheat oven to 365 F (185 C).

  2. In a large bowl, melt butter, then stir in milk, salt, and pepper; microwave until warm.

  3. Butter a 9x13-inch baking tray.

  4. Combine crumbled white cheese, eggs, and chopped parsley in a separate bowl.

  5. Drizzle a small amount of the milk mixture into the prepared tray.

  6. Place a yufka sheet in the tray, then spoon 1/6 of the milk mixture over it. Sprinkle 1/5 of the cheese mixture over the yufka.

  7. Repeat the layering process until 5 yufka sheets and cheese portions are used. Cover the top with the last yufka sheet and drizzle with the remaining milk mixture.

  8. Sprinkle the top with sesame or nigella seeds.

  9. Bake for 35 to 45 minutes until browned and firm.

  10. Upon removal from the oven, sprinkle with 1-2 tablespoons of cold water, then wrap in paper or a towel. Allow to rest for 20 minutes before cutting.
