Instructions

  1. Preheat the oven to 350 F (180 C). Line a 13x9-inch baking pan with foil.

  2. In a saucepan, combine peach preserves, honey, brown sugar, and lemon juice; bring to a boil, then reduce heat and simmer for 2 minutes. Set aside the glaze.

  3. Season the pork loin with salt and pepper, then place it fat-side up in the prepared pan. Roast for 1 hour.

  4. Brush the roast with the peach glaze mixture. Continue roasting for 30 to 40 minutes, frequently applying more glaze.

  5. Allow the roast to rest for 10 minutes before slicing and serving with the pan juices.

  6. Ensure the pork reaches an internal temperature of at least 145 F (62.8 C).
