Bondi Portugese Chicken Burger

A spicy Portuguese chicken burger, inspired by a popular charcoal chicken shop in Bondi Beach, features marinated chicken breast and a fiery chile sauce.

Instructions

  1. Combine chopped habanero chiles, lemon juice, ginger, vegetable oil, paprika, garlic, sugar, and chile flakes in a bowl, then stir.

  2. Spoon half of the sauce into a separate bowl and set aside. Add chicken breast fillets to the remaining sauce, stir to coat, and refrigerate for 1 hour.

  3. Mix flour and salt. Remove chicken from the sauce, shake off any excess, and lightly dredge in the flour-salt mixture.

  4. Heat a nonstick pan with a little vegetable or canola oil. Pan-fry chicken breasts for several minutes on each side until cooked through, reaching an internal temperature of 165 F.

  5. Assemble the burgers by spreading mayonnaise on the buns, then layering with romaine lettuce, a cooked chicken breast, provolone cheese, and the reserved chile sauce.

  6. Serve immediately, optionally with a fresh green salad.
