Bolinhos de Chuva: Brazilian Cinnamon "Raindrop" Doughnuts

Instructions

  1. Preheat several inches of vegetable oil to 360 F in a deep fryer or skillet.

  2. Combine cinnamon with 1/2 cup sugar in a small bowl; set aside.

  3. In a separate bowl, mix flour, salt, and 3 tablespoons sugar.

  4. Stir in eggs and 1/2 cup buttermilk, adding more buttermilk gradually until the mixture is a very thick batter.

  5. Incorporate the baking powder into the batter.

  6. Scoop generous teaspoons of batter into the hot oil, using a second spoon to assist.

  7. Fry doughnuts, turning occasionally, until golden brown on all sides; avoid overcrowding.

  8. Remove fried doughnuts from oil, drain briefly on paper towels, then immediately roll in the cinnamon sugar mixture.

  9. Cook remaining batter in batches and serve hot.
