Bolillo (Mexico’s Favorite White Bread) Recipe
Crusty bolillos are versatile bread rolls, ideal for accompanying saucy Mexican cuisine or making molletes.

Instructions

Preheat the oven to 375 F.

Combine water and yeast in a large bowl. Separately mix flour, salt, and sugar.

Gradually add the dry mixture to the wet ingredients, mixing until a stiff dough forms, adding extra flour one tablespoon at a time if needed.

Place the dough in a greased bowl, cover, and let rise in a warm place for one hour.

Punch down the dough and knead on a lightly floured surface for 10 minutes until smooth.

Divide the dough into 10 balls.

Shape each ball into a cylindrical roll with tapered ends, place on a baking sheet, cover, and let rise for 30 minutes.

Brush each roll with egg white and score the top 1/4-inch deep.

Bake for 30 minutes, or until browned and cooked through.

Remove from the oven and cool.
