Bok Choy and Shiitake Mushroom Stir-Fry Recipe

Instructions

  1. Heat 1 tablespoon canola oil in a wok or large skillet over medium-high heat, then add 3 to 4 cloves minced garlic and 2 teaspoons minced ginger, stirring for 30 seconds.

  2. Add 1 cup sliced shiitake mushrooms (or 1/2 cup shiitake with 1/2 cup button mushrooms) and cook for 2 to 3 minutes.

  3. Stir in 1 tablespoon soy sauce, 1 head bok choy, and 5 to 6 sliced green scallions; cook for a few more minutes.

  4. Reduce heat to medium-low, add 1/4 cup vegetable broth, and simmer until the bok choy is crisp-tender, 3 to 5 minutes.

  5. Stir in 2 teaspoons sesame oil and optionally 2 tablespoons sesame seeds, then remove from heat.
