Instructions

  1. Scrub and peel potatoes, if desired, then cut into uniform pieces (cubes, chunks, or whole).

  2. Place potatoes in a large saucepan, cover with cold water, and add 1 tablespoon of salt.

  3. Bring to a boil over high heat, then reduce to medium-low, cover, and maintain a gentle boil.

  4. Boil for 12-15 minutes for small pieces, 15-20 minutes for medium, or 25-30 minutes for large whole potatoes, until easily pierced with a fork.

  5. Drain potatoes thoroughly in a colander, then prepare as desired.
