Boerenmeisjes (Dutch Brandied Apricots) Recipe

A Dutch regional specialty from Groningen, these boerenmeisjes are brandied apricots perfect for serving over vanilla ice cream.

Instructions

  1. Sterilize jam jars and rinse apricots, then combine apricots with sugar and water in a large saucepan to soak for 24 hours.

  2. After soaking, add three to four strips of lemon zest to the saucepan; bring the mixture to a boil, then immediately transfer the apricots to the sterilized jars.

  3. Reduce the remaining liquid until it thickens, then remove from heat, cool slightly, stir in brandy, and discard the lemon zest.

  4. Pour the thickened liquid over the apricots in the jars, shake, seal tightly, and store in a cool, dark place for six weeks before consumption.
