Instructions

  1. Combine sugar and water in a saucepan; cook over medium heat until sugar dissolves.

  2. Pare two thin lemon peel strips, avoiding pith; add to saucepan with sultanas, honey, vanilla, and spices.

  3. Simmer over low heat until the fruit swells and softens.

  4. Bring mixture to a boil, then use a slotted spoon to transfer sultanas into sterilized jam jars.

  5. Reduce the remaining liquid until thickened; cool, then remove lemon peel and spices.

  6. Pour the cooled liquid over the sultanas, then add the brandy.

  7. Seal jars tightly, shake, and store in a cool, dark place for a minimum of six weeks; refrigerate once opened.
