Blueberry-Filled Pierogi

A sweet take on traditional Polish pierogi, these dumplings are filled with a luscious blueberry mixture.

Instructions

  1. Start boiling a large pot of water.

  2. For the filling, combine sugar, cinnamon, lemon zest (if desired), and blueberries in a saucepan. Bring to a boil, then reduce heat and simmer for 2 minutes; cool completely.

  3. Prepare pierogi dough (using a separate recipe).

  4. Cut dough into circles. Place 3-4 cooled blueberries from the filling on each circle, fold into a semi-circle, and seal the edges tightly.

  5. Gently add dumplings to the simmering water.

  6. Cook for 2-3 minutes until they float to the surface.

  7. Remove dumplings with a slotted spoon and drain.

  8. Serve, garnished with any reserved blueberry sauce.
