Instructions

  1. Preheat the oven to 350 F and prepare a 9x5x3-inch loaf pan by greasing and flouring it.

  2. In a bowl, combine flour, sugar, baking powder, salt, and baking soda, then create a well in the center.

  3. In a separate bowl, whisk together the egg, milk, vegetable oil, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients' well and stir until just moistened.

  5. Fold in the lemon peel, blueberries, and chopped pecans.

  6. Transfer the batter to the prepared loaf pan.

  7. Bake for 60 to 75 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool the bread in the pan on a rack. For enhanced flavor, wrap and refrigerate overnight.
