Instructions

  1. Start boiling white wine or vinegar, water, hot sauce, and salt in a small pot.

  2. Trim green beans to a maximum length of 4 inches.

  3. Place celery seeds, mustard seeds, and black peppercorns into a clean pint-sized canning jar.

  4. Arrange trimmed beans vertically and pack tightly into the jar along with garlic, chile pepper, and fresh thyme sprigs.

  5. Pour the hot brine over the beans, ensuring they are fully submerged while maintaining 1/2-inch headspace.

  6. Wipe the jar rim clean and secure with a 2-piece canning lid.

  7. Refrigerate for up to two months; for longer room temperature storage, process in a boiling water bath for 10 minutes.

  8. Allow at least four days for flavor development before serving.
