Blonde Chocolate Recipe

Instructions

  1. Preheat the oven to 250 F and position a rack in the center.

  2. Finely chop the white chocolate and spread it in a single layer on a rimmed baking sheet.

  3. Bake for 10 minutes until melted, then spread evenly with a dry rubber spatula.

  4. Continue baking, stirring and spreading every 10 minutes, until the chocolate reaches an unroasted peanut butter color (45 minutes to 2.5 hours).

  5. Stir the blonde chocolate thoroughly one last time, adding salt to taste if desired.

  6. Use immediately, or cool and transfer to an airtight container for storage.
