Blender Strawberry Mochi Muffins

Instructions

  1. Preheat the oven to 350 F.

  2. Line a 12-cup muffin pan with greased liners, or grease the cups directly.

  3. Combine oil, milk, eggs, condensed milk or syrup, food coloring, strawberries, miso, baking powder, sugar, and rice flour in a blender; blend until smooth.

  4. Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

  5. Bake for 50 to 55 minutes, covering with aluminum foil after 15 minutes to preserve the pink color, until a toothpick inserted comes out clean.

  6. Cool the muffins on a wire rack, then add desired toppings.
