Blackened Seasoning

A Cajun classic, this blackened seasoning blend is perfect for searing fish, meat, or poultry over high heat in a cast-iron skillet.

Instructions

  1. Combine all seasoning ingredients and transfer to a shaker for storage.

  2. Heat a large cast-iron skillet over high heat for 8 to 10 minutes.

  3. Clarify 1 cup of butter (or use ghee), setting aside 1/3 cup for cooking and reserving the rest for serving.

  4. Liberally coat redfish fillets with the prepared seasoning blend.

  5. Add a few tablespoons of the clarified butter to the hot skillet, then arrange the seasoned fish.

  6. Drizzle each fillet with 1 teaspoon of the remaining clarified butter; cook uncovered for 2 minutes until charred.

  7. Flip the fillets, add more butter to the pan, and cook for another 2 minutes, drizzling with additional butter.

  8. Serve the blackened fish immediately with the reserved melted butter.
