Blackberry Cobbler
A classic blackberry cobbler featuring a soft center and chewy edges, this 8-ingredient dessert bakes beautifully in a cast-iron skillet and pairs perfectly with vanilla ice cream.

Preheat the oven to 350 F.

Combine berries with 1/4 cup (50g) sugar in a bowl and set aside for 30 minutes to macerate.

Whisk flour, baking powder, salt, and remaining 3/4 cup (150g) sugar in a separate bowl.

Create a well in the dry ingredients; whisk in milk and vanilla until a smooth batter forms.

Melt butter in a 9-inch cast-iron skillet or 2-quart baking dish in the preheated oven for 4-5 minutes, then remove.

Pour the batter over the melted butter without stirring. Evenly scatter the macerated berries and any remaining sugar on top.

Bake for 45-50 minutes until golden brown and a toothpick comes out mostly clean.

Cool on a wire rack for 15 minutes, then serve warm.
