Blackberry and Red Wine Sauce

Instructions

  1. Purée 1 1/2 cups of blackberries, then strain the purée into a bowl.

  2. Heat 1 tablespoon butter in a pan over medium-low heat.

  3. Sauté onions for about 10 minutes until tender and light yellow.

  4. Add red wine and lemon juice, bring to a boil, then simmer until the mixture reduces by half.

  5. Stir in the puréed blackberries, jam or preserves, pepper, and salt.

  6. Bring to a boil, then simmer for 5 minutes.

  7. Stir in 1 tablespoon cold butter.

  8. Serve garnished with fresh whole blackberries.
