Blackberry and Red Wine Sauce

Instructions

Purée 1 1/2 cups of blackberries, then strain the purée into a bowl.

Heat 1 tablespoon butter in a pan over medium-low heat.

Sauté onions for about 10 minutes until tender and light yellow.

Add red wine and lemon juice, bring to a boil, then simmer until the mixture reduces by half.

Stir in the puréed blackberries, jam or preserves, pepper, and salt.

Bring to a boil, then simmer for 5 minutes.

Stir in 1 tablespoon cold butter.

Serve garnished with fresh whole blackberries.
