Black Sesame Pudding

Instructions

Start heating salted water in a pot over medium-high heat.

Grind sesame seeds in a coffee grinder until they become oily and paste-like.

Stir ground sesame seeds into the hot salted water.

Grind nuts finely and add them to the pot, stirring well.

Bring the mixture to a boil, then reduce heat to medium and simmer for 5 to 8 minutes.

Optionally, strain the pudding to remove solid bits, returning the liquid to the pot.

Over medium to low heat, add sugar, vanilla, coconut cream, and the arrowroot-water mixture, stirring continuously until thickened.

Taste and add more brown sugar if needed for desired sweetness.

Serve warm in dessert cups, garnished with shredded coconut, ground peanuts, or a swirl of coconut milk.
