Black Sesame Pudding

Instructions

  1. Start heating salted water in a pot over medium-high heat.

  2. Grind sesame seeds in a coffee grinder until they become oily and paste-like.

  3. Stir ground sesame seeds into the hot salted water.

  4. Grind nuts finely and add them to the pot, stirring well.

  5. Bring the mixture to a boil, then reduce heat to medium and simmer for 5 to 8 minutes.

  6. Optionally, strain the pudding to remove solid bits, returning the liquid to the pot.

  7. Over medium to low heat, add sugar, vanilla, coconut cream, and the arrowroot-water mixture, stirring continuously until thickened.

  8. Taste and add more brown sugar if needed for desired sweetness.

  9. Serve warm in dessert cups, garnished with shredded coconut, ground peanuts, or a swirl of coconut milk.
