Instructions

  1. Place chopped chocolate in a medium heat-safe bowl.

  2. Heat cream in a small saucepan over medium heat until small bubbles form, avoiding a boil.

  3. Pour hot cream over chocolate, let sit 1 minute, then whisk until combined; stir in chopped cherries and kirschwasser, if using.

  4. Cover ganache with cling wrap, cool to room temperature, then refrigerate for 2 hours to firm.

  5. Scoop or pipe 1-inch ganache mounds onto a parchment-lined baking sheet.

  6. Dust hands with cocoa powder and roll mounds into balls, then refrigerate for 1 hour until firm.

  7. Melt chocolate candy coating in the microwave, stirring every 30 seconds.

  8. Dip truffles in melted coating, return to the baking sheet, and top with sprinkles, dried cherry, or a piped red candy dot while wet.

  9. Chill truffles for 15 minutes until set; serve at room temperature and store refrigerated for up to two weeks.
