Black-Eyed Peas and Greens Soup

Instructions

  1. Heat vegetable oil in a large Dutch oven over medium heat.

  2. Sauté onion and celery for 5 minutes until tender.

  3. Add bell pepper, ham, and garlic; cook for 2 to 3 minutes, stirring frequently.

  4. Stir in chicken stock, black-eyed peas, turnip greens, tomatoes, Creole seasoning, pepper, and oregano.

  5. Reduce heat to low, cover, and simmer for 45 minutes to 1 hour (Alternatively, combine all ingredients in a slow cooker and cook on low for 5 to 7 hours or on high for 2.5 to 3.5 hours).

  6. Taste and adjust salt as needed.
