Instructions

  1. Combine black beans, cold cooked rice, green and red bell peppers, chopped tomato, and green onion in a serving bowl.

  2. Whisk together olive oil, lime juice, Dijon mustard, sugar, cumin, and pepper in a separate bowl.

  3. Pour the dressing over the bean and rice mixture and stir to blend.
