Bitter Melon Stir Fry

Instructions

  1. Halve 1 pound bitter melon lengthwise, scoop out seeds, and slice diagonally into 1/4-inch pieces.

  2. Salt the slices and drain in a colander for 15 minutes.

  3. Mash 1 tablespoon minced garlic and 1/2 teaspoon chili pepper flakes together.

  4. Heat a wok over medium-high heat with 2 tablespoons neutral oil, then add the garlic and chili mixture.

  5. Stir-fry for about 30 seconds until aromatic.

  6. Add bitter melon and stir-fry for 2 minutes, then incorporate 2 tablespoons light soy sauce and 1 tablespoon red wine or balsamic vinegar.

  7. Stir in 1/2 teaspoon sugar and cook for another 2 to 3 minutes until browning and softened.

  8. Stir in a few drops of sesame oil, if desired, and serve.
