Instructions

  1. Prepare intense, constant heat from grill coals, fanning them if they die down.

  2. Place steak on the grill, sear briefly, then slightly raise the grill to reduce direct heat.

  3. When the steak releases easily, flip it and liberally salt the seared surface.

  4. After a few minutes, once the second side releases, flip again and salt.

  5. Grill for a few more minutes, then flip and lightly season with pepper.

  6. Flip one final time and lightly season with pepper again.

  7. Cook a 2-inch steak (removed from the fridge 1 hour prior) for about 3-4 minutes per side over high heat to achieve a rare interior, accounting for carryover cooking.
