Bistec a lo Pobre - Steak and Potatoes With Fried Eggs

Instructions

  1. Preheat oven to 200 F and heat vegetable oil to 360 F in a large pot.

  2. While the oil heats, peel and cut potatoes into fries. Cook fries in the hot oil until golden, then drain, season with salt, and transfer to the preheated oven to keep warm.

  3. Carefully pour out excess oil from the pot, leaving approximately 3 tablespoons in the skillet, or use a new skillet. Sauté onions for about 10 minutes until soft and golden brown. Transfer the onions to a shallow pan and place them in the oven with the fries.

  4. Finely chop the garlic. Season one side of the steaks with salt, pepper, and half the chopped garlic, then pound to flatten. Flip and repeat seasoning and pounding on the other side with the remaining garlic.

  5. Sear the steaks over high heat, turning once, until browned and cooked to your desired doneness. Place the cooked steaks over the onions in the oven.

  6. Add a small amount of oil to the skillet and fry the eggs sunny-side up, seasoning with salt and pepper as desired.

  7. While the eggs cook, remove the potatoes, steak, and onions from the oven. Distribute the onions among 4 plates, top with a portion of the fries, and lay the steaks on top. Finish by placing a fried egg on each steak. Serve immediately.
