Instructions

  1. Preheat the oven to 425 F.

  2. In a large bowl, whisk Bisquick mix and sugar; then stir in milk and melted butter until just combined.

  3. Spoon the batter into 6 portions onto a baking sheet and optionally sprinkle with extra sugar.

  4. Bake for 10 to 12 minutes until lightly browned and risen.

  5. Chop strawberries, mix with sugar, and set aside.

  6. Beat cream in a large bowl until soft peaks form, then mix in vanilla extract and powdered sugar.

  7. Allow shortcakes to cool slightly before splitting them.

  8. Fill each split shortcake with strawberries and whipped cream, then serve immediately.
