Shape four 6-ounce bison patties, slightly larger than buns, with a thumb indentation in the center; season lightly with kosher salt and black pepper.

Heat unsalted butter in a heavy skillet over medium to medium-low heat.

Cook one or two patties in the skillet for 3 to 4 minutes per side, flipping when the burger easily releases from the pan.
