Biscuits and Gravy
Classic southern biscuits and gravy features tender, flaky biscuits paired with a rich, savory sausage gravy.

Instructions

Preheat the oven to 450 F and line a baking sheet with parchment paper.

Whisk flour and sugar in a large bowl. Grate frozen butter into this mixture, then toss and rub until the butter is pea-sized.

Stir in buttermilk until the dough is shaggy.

Turn dough onto a floured surface. Knead 5-8 times until it comes together, then roll to 1/2-inch thick.

Fold the dough in half, roll to 1/2-inch, then fold again and roll to 3/4-inch thick.

Cut 12 2 1/2-inch dough circles, re-rolling scraps once. Transfer to the prepared baking sheet.

Bake 12 to 15 minutes until golden brown. Immediately brush with melted butter, then cool for 3 to 5 minutes.

While biscuits bake, heat a large skillet over medium-high. Cook sausage, breaking it apart, for 5-6 minutes until browned.

Reduce heat to medium. Add bacon drippings or butter and melt. Sprinkle in flour, stirring constantly for 1 minute until coated.

Gradually pour in milk, stirring constantly. Simmer over medium heat for 4-5 minutes until thickened. Stir in salt and pepper.

Turn off heat, keeping gravy warm. Split biscuits, then spoon 2/3 cup gravy over each half and serve immediately.
