Instructions

  1. In a medium saucepan, combine 1 cup yellow mustard, 1/2 cup granulated sugar, 1/3 cup light brown sugar, 3/4 cup cider vinegar, 1/4 cup water, 2 tablespoons mild chili powder, 1 teaspoon black pepper, 1 teaspoon white pepper, and 1/2 teaspoon cayenne if desired.

  2. Simmer on low heat for 20 minutes, stirring periodically.

  3. Stir in 1 teaspoon soy sauce, 2 tablespoons unsalted butter, and 1 tablespoon liquid smoke, then continue simmering for 10 minutes.

  4. Remove from heat and cool for 10 to 15 minutes before using.
