Big Cluster Pumpkin Spice Granola

Instructions

  1. Preheat the oven to 300 F and line a large rimmed baking sheet with parchment paper.

  2. Combine oats, pecans, pepitas, quinoa, pumpkin pie spice, and salt in a large bowl.

  3. Whisk pumpkin puree, maple syrup, honey, olive oil, and vanilla in a small bowl.

  4. Pour the wet mixture into the dry ingredients and combine, then press the granola firmly into an even layer on the prepared baking sheet using parchment paper.

  5. Bake for 40 minutes, or until golden and firm, rotating the pan halfway through; do not stir. Cool completely on a rack after baking.

  6. Once cooled, break the granola into clusters, add raisins, and store in an airtight container for up to two weeks.
