Big Batch White Bean and Ham Soup

Instructions

  1. Rinse white beans, discarding any discolored or damaged ones.

  2. Combine rinsed beans, stock, and ham bones in a large kettle; bring to a boil.

  3. Reduce heat, cover, and simmer for 2 to 3 hours until the beans are tender.

  4. During simmering, prepare the onion and carrots.

  5. After 2 to 3 hours, stir the onion, carrots, and pepper into the beans; cover and simmer for an additional 30 minutes.

  6. Remove the ham bones, set aside to cool, and then pull any meat from them to stir back into the soup.

  7. Whisk cold water and flour until smooth in a separate bowl, then gradually stir into the soup until thickened.

  8. Cook for 10 additional minutes, adjusting thickness with more water if desired.
