Bierocks (Runzas) Recipe
Small yeast rolls, also known as runzas, feature a savory filling of ground beef, onions, and cabbage, making them an ideal snack or lunch item.

Instructions

Preheat the oven to 400°F and prepare the dough.

Scald milk, then stir in sugar and butter until dissolved; cool to warm and sprinkle with yeast to soften.

In a stand mixer, combine the yeast mixture, salt, egg, and gradually add flour, kneading for 5 minutes until a smooth, elastic dough forms.

Transfer the dough to a greased bowl, cover, and let rise for 1 hour.

While the dough rises, brown ground beef in a skillet, then add onions and cabbage, sautéing for 3 minutes until softened.

Stir in remaining filling ingredients, remove from heat, and allow to cool.

Once the dough has doubled, line two baking sheets with parchment paper and divide the dough into 12-14 balls.

Roll each dough ball into a 5-inch round, place 1-2 tablespoons of filling in the center, then pinch and seal the edges completely.

Place the sealed rolls seam-side down on the prepared baking sheets, brush with egg wash, and sprinkle with desired seeds.

Bake for 15 minutes or until golden brown, then cool slightly before serving.
