Instructions

  1. Heat a large sauté pan or griddle on medium-high with olive oil.

  2. Add onions, green bell pepper, and mushrooms; sprinkle with 1/2 tsp salt and 1/4 tsp ground pepper. Sauté for 5 to 6 minutes until softened and slightly caramelized.

  3. Transfer the cooked vegetables to a bowl.

  4. Flatten the plant-based meat into sandwich-sized patties, place on the griddle, and season with the remaining salt and pepper.

  5. Cook for 3 minutes until browned, then flip, break into strips, and cook for an additional 3 minutes.

  6. Combine the cooked vegetables with the meat on the griddle.

  7. Cover each portion with two slices of cheese, then cover the pan with a lid to steam until the cheese melts.

  8. Warm rolls by pressing them over the meat and cheese, or toast them separately.

  9. Stuff each roll with the mixture and serve.
