Instructions

Heat a large sauté pan or griddle on medium-high with olive oil.

Add onions, green bell pepper, and mushrooms; sprinkle with 1/2 tsp salt and 1/4 tsp ground pepper. Sauté for 5 to 6 minutes until softened and slightly caramelized.

Transfer the cooked vegetables to a bowl.

Flatten the plant-based meat into sandwich-sized patties, place on the griddle, and season with the remaining salt and pepper.

Cook for 3 minutes until browned, then flip, break into strips, and cook for an additional 3 minutes.

Combine the cooked vegetables with the meat on the griddle.

Cover each portion with two slices of cheese, then cover the pan with a lid to steam until the cheese melts.
