Instructions

  1. Preheat oven to 325 F.

  2. Combine chicken broth, butter, lemon juice, garlic powder, black pepper, and white pepper in a saucepan; melt butter while mixing.

  3. Season with salt to taste, then remove from heat and cool for 8 minutes until just warm.

  4. Load mixture into a meat injector and distribute it into about 12 spots in the bird, particularly the breast, using approximately 2 teaspoons per site.

  5. Massage the bird to distribute the injected mixture.

  6. Refrigerate the bird for several hours, ideally overnight. Discard any remaining injected mixture; if basting, prepare a fresh batch and melt if stored overnight.

  7. Roast the turkey for 15-20 minutes per pound, basting with fresh marinade if desired.

  8. Ensure the turkey reaches an internal temperature of 165 F in the thickest part.

  9. Rest the bird for 30 minutes before carving.
