Instructions

  1. Preheat the oven to 230 F (110 C).

  2. In a large baking dish, combine 6 oz (175 g) raisins, 4 oz (110 g) dried currants, 4 oz (110 g) finely chopped candied mixed peel, 6 oz (175 g) shredded suet, 1/2 lb (225 g) dark brown sugar, 1/2 tsp freshly grated nutmeg, 2 tsp mixed spice, the zest and juice from 1 lemon, the zest and juice from 1 orange, and 1 cored and finely chopped apple; stir well.

  3. Cover the dish with a clean tea towel and let it sit overnight for flavors to meld.

  4. Remove the tea towel, cover the dish with foil, and bake in the preheated oven for 2.5 hours.

  5. Remove from oven, stir the mincemeat well, and allow it to cool completely, stirring occasionally.

  6. Once cooled, stir in 4 tablespoons of brandy.

  7. Fill sterilized jars with the cold mincemeat and seal with canning lids.
