Instructions

  1. Preheat the oven to 200°F and prepare a rack in a large rimmed baking sheet.

  2. Whisk 1.5 cups milk and 2 eggs in a bowl.

  3. In a large resealable bag, combine 2.5 cups flour, 2 tablespoons salt, and 2 teaspoons black pepper, then shake to mix.

  4. Dip 4 pounds of chicken pieces into the milk-egg mixture, then transfer to the flour bag, seal, and shake to coat; repeat for all chicken.

  5. Heat 2 inches of vegetable oil in a deep skillet to 350°F and line a serving plate with paper towels.

  6. Fry chicken in batches, about 10 minutes per side, until golden brown and cooked through.

  7. Transfer fried chicken to the paper towel-lined platter to drain, then sprinkle generously with salt.

  8. Move drained chicken to the prepared baking sheet and keep warm in the oven while frying the remaining pieces; then serve.
