Best Homemade Vanilla Cake
A fluffy and simple vanilla cake that can be easily doubled or tripled for larger celebrations.

Instructions

Preheat oven to 350 F and position a rack in the center.

Prepare two 9-inch cake pans by buttering, flouring, and optionally lining with parchment.

In a stand mixer, combine sugar, flour, baking powder, and salt; mix until blended.

On low speed, gradually add softened butter to the dry ingredients until sandy; scrape the bowl.

Incorporate vanilla extract, then slowly add milk on low speed; scrape and mix for 1 minute.

Add eggs one at a time, mixing each until incorporated; scrape, then mix on medium until fluffy for 30 seconds.

Divide batter evenly into prepared pans, tap to release air, and bake in the preheated oven.

Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.

Cool cakes in pans on a wire rack for 10 minutes, then invert onto racks to cool completely for at least 1 hour.
