Instructions

  1. If canning, start a boiling water bath.

  2. Combine chopped cucumbers, onion, bell pepper, and salt in a large bowl, then refrigerate for 24 hours to draw out moisture.

  3. Transfer vegetables to a fine-mesh sieve, rinse thoroughly with cool water, and squeeze out excess liquid.

  4. In a medium saucepan, whisk cornstarch into vinegar; stir in sugar, celery seed, mustard seeds, mustard, turmeric, nutmeg, and pepper.

  5. Bring the mixture to a boil over medium heat, stirring often.

  6. Add the drained vegetables and simmer for 10 minutes, stirring occasionally.

  7. Ladle hot relish into clean, hot canning jars, leaving 1/2 inch headspace; seal with lids.

  8. If canning, process sealed jars in the boiling water bath for 10 minutes; otherwise, serve.
