Best Homemade Marzipan

Instructions

  1. Coarsely chop 1 pound almond paste into quarter-sized chunks.

  2. In a stand mixer or food processor, add the chopped almond paste and 3 cups powdered sugar, then mix on low speed until the mixture has a fine, sandy texture.

  3. Slowly incorporate up to 2 large egg whites and 1/2 teaspoon almond extract, continuing to mix on low speed until the mixture pulls away from the sides and forms a ball.

  4. Dust a countertop with powdered sugar and knead the marzipan until it achieves a smooth, pliable consistency.

  5. Use the marzipan immediately or store it for later.
